Halloween cupcakes are one of the fastest and most rewarding holiday projects a decorator can tackle – and they are a perfect activity to do with children. In this quick tutorial, Chef Alan Tetreault walks through two simple piping techniques using pre-made buttercream in black and orange, then finishes each cupcake with themed sprinkles, royal icing decorations, and decorative cupcake wrappers. The entire process takes just minutes per cupcake.
What You'll Need
- Wilton 1M decorating tip – a large open star tip ideal for cupcake decorating
- Kee-Seal disposable decorating bags – feature a textured grip so the bag does not slip when hands get messy
- Pre-made buttercream icing by CK Products – in black and orange; shop buttercream icing
- Halloween sprinkles – Wilton "Fright Night" mix, orange and black sprinkles, and other seasonal varieties
- Royal icing decorations – Halloween-themed toppers including vampires, ghosts, and stand-up figurines; shop royal icing decorations
- Cupcake wrappers – decorative Halloween designs including pumpkin faces, bats, and plain black
- Halloween baking liners – themed liners for baking cupcakes directly
- Baked cupcakes – cooled upside down on a rack for a flatter top
- Scissors – for trimming the disposable bag
Preparing Your Piping Bag
- Hold the Wilton 1M tip against the outside of the Kee-Seal bag to measure where to cut – the tip is about an inch and a half long.
- Snip off just over an inch from the end of the bag.
- Drop the tip into the bag and check that it pokes through the opening cleanly.
💡 Tip: It is better to cut off less and trim a little more later. Cutting too much means starting over with a new bag.
Filling and Holding the Bag
- Fold down the top of the bag like a cuff or collar – this keeps the outside of the bag clean while filling.
- Scoop buttercream into the bag.
- Unfold the cuff and squeeze the icing down toward the tip.
- Twist the top of the bag and hold the twist between the thumb and first finger.
- Apply pressure using the three remaining fingers pushing against the palm of the hand.
⚠️ If the bag is not twisted and held properly, icing will push up and out the top instead of through the tip. The key is to twist the top shut and squeeze from the palm – never from the middle of the bag.
Cupcake #1 – Stars with a Vampire Topper
This design uses black buttercream stars around the outside edge and orange stars in the center, finished with Halloween sprinkles and a royal icing vampire.
- Hold the tip straight up and down over the edge of the cupcake.
- Squeeze to pipe a star, then release the pressure before lifting straight up.
- Repeat all the way around the outside edge of the cupcake with black buttercream.
- Switch to orange buttercream and pipe stars to fill in the center.
- Add a scattering of Wilton "Fright Night" sprinkles plus orange and black sprinkles.
- Lift a royal icing vampire decoration off its paper backing and press gently onto the icing.
- Slide the finished cupcake into a decorative Halloween wrapper.
💡 Tip: Cool baked cupcakes upside down on a wire rack so the tops flatten slightly – this creates a more even surface for decorating.
Cupcake #2 – Rosettes with a Ghost Topper
This design uses orange buttercream rosettes around the outside and a cluster of black rosettes in the center, finished with sprinkles and a standing ghost decoration.
- Hold the tip over the edge of the cupcake and squeeze while moving in a small circular motion to create a rosette.
- Release the pressure before pulling away – this prevents trailing icing.
- Repeat all around the outer edge of the cupcake with orange buttercream.
- Switch to black buttercream and pipe a small cluster of rosettes in the center.
- Add a different variety of Halloween sprinkles for contrast.
- Place a standing royal icing ghost decoration on top.
- Slide into a decorative cupcake wrapper.
💡 Tip: Always stop squeezing before pulling the tip away. If pressure is maintained while lifting, trails of icing will drag across the cupcake surface.
Finishing with Wrappers and Decorations
