A rich, rounded vanilla with a soft cherry note underneath — full and warm where an ordinary extract tastes thin and sharp. Almond and cherry on the nose, vanilla through the middle. Never lemony, never sharp.
Why bakery cakes taste different
Most home baking uses vanilla extract, which is alcohol-based. Alcohol boils well below the temperature of an oven and takes aromatics with it as it goes — which is why a cake can smell wonderful going in and taste faintly of nothing coming out. Bridal Blend is not alcohol-based, so more of what you add is still there when it comes out.
There is a colour difference too. Vanilla extract is dark: it turns a white buttercream ivory and takes the life out of a pastel one. Bridal Blend keeps pure icings white, and preserves the vibrancy of tinted icings.
How to use it
It is roughly twice the strength of vanilla extract, so use half of what a recipe calls for. Where a recipe asks for two teaspoons of vanilla, start with one. As a guide: half to one teaspoon per batch of buttercream, half to one teaspoon in a standard cake or cookie recipe, an eighth of a teaspoon in a latte, half a teaspoon in a quart of ice cream base. Adjust to taste from there.

- Extra strength — roughly twice the strength of vanilla extract.

Good flavor but the lemon overtakes the traditional southern almond/vanilla flavor.

Opened the product it smells great. Loved the chef, one of the best teachers for cake baking and decorating. Haven’t used it yet but will do a follow up.
This product gives a beautiful citrusy vanilla taste to all cakes. It is yellow, so it adds a bit of darkness to a pure white cake in which I did use some white coloring to blend back to a pure white cake.
Great flavor and smell.
Just what I was looking for but didn’t know it! I’m somewhat new to baking and stumbled across a mention of it on a social media baking page (forget where), someone stated that it had a “wedding cake flavor,” and I love that taste, so found and ordered it. I used it to flavor the buttercream frosting for my husband’s birthday cake— PERFECTION! My regular buttercream frosting is great but this added the professional bakery flavor to it. I will definitely continue to order and recommend too!
This has a bitter chemical taste if you try to get a strong flavor and add even a little too much...it is possible to correct this by adding more sugar...but you risk a looser batter.
I like my cakes to have a robust flavor.
You can make basically the same flavor profile with 4tsp Vanilla extract (clear), 2 tsp Almond extract, 1/2tsp butter flavor extract, 1/8tps banana extract, and a couple drops of Orange Extract....adjust for the flavor you like most. I also added a couple drops of LorAnn Cake Batter flavor Oil. Using good high quality extracts is the key to good flavor....good flavoring amount for 12-14 cups of batter (3 X 8x2).
Since you can never have too much good vanilla, I also add a heaping tablespoon of Nielsen-Massey Pure Vanilla Bean Paste...it doesn't cover up the other flavors but does provide a very fragrant rich vanilla presence.

Chef Alan's products have never let me down. I've purchased bridal blend flavoring several times and the flavor is always consistent. Mix well with the buttercream. Does not alter the flavor of the buttercream. 👍
Everyone loved the taste of my cake. I also watched his video on best scratch cake and hot to make a big cake taste like a scratch cake. I’ve made both and no one could tell the difference. Love all Alan’s video’s.

I started using this when chef alan was selling on his website, then he retired and i couldn’t get this blend anymore, finally found out he is still selling some of his items on amazon. This is the best flavor! Everyone asks me what is that delicious flavor in my frosting. It may seem expensive but it really isn’t, a little goes a long way. I use 1 tblsp for a 2 lb powdered sugar frosting.
Love this flavoring. It’s the perfect blend of almond, citrus and vanilla for that classic wedding cake flavor. I even add a few teaspoons to my French toast custard, elevating it to something truly special
Good taste, like almond cherry combo.
I refrigerate this. It is pourable, not thick, and yellow tan in color. Color did not affect white cake batter nor white frosting. A little goes a long way - pairs well with vanilla.
I used this for the first time in a birthday cake I made last month then again in some sugar cookies I made. Everybody thought the cake tasted like I got it from a professional bakery. I didn't taste the product by itself so I can't tell you what it tastes like, but I can say it does slightly change the flavor of cake batter, but for the better. You only need a tiny bit. I add this in addition to any other flavoring I use, like vanilla. I highly recommend this product.

I watch quite a few of the videos online that Alan makes and this was brought up in the buttercream video. Exactly how he explained it kind of a floral citrus tone. It is nice and something a bit different.

Cherry, almond, hazelnut, vanilla and a bunch of other subtle flavors makes this one of the best flavorings I have ever tried. I used it on a cake for a coworker's birthday and everyone was raving about it!
